I just made it something similar with what I had available: I used 2% Greek Fage Yogurt instead of a roux, mixed it into the elbows, added the slightly mashed up cooked cauliflower florets, added lots of Locatelli Romano, sea salt, pepper, and a little Dubliner cheddar. Put the mixture into a shallow baking dish, topped it with more Romano and some whole wheat Panko crumbs, sprayed the top with olive oil Pam and broiled it. DELICIOUS. It wasn't really a cheddary mac and cheese, but it was never the less cheesy, creamy, crunchy and tasty. Next time I have a good, sharp cheddar available, (Dubliner is too mild) I will make it more cheddary. I call this my Greek mac and cheese!
