Quinoa with Kale and Goat Cheese


   1 cup uncooked quinoa

   1 Tbsp extra virgin olive oil

   ½ cup onion, diced

   ½ cup red bell pepper, diced

   2 garlic cloves, minced

   2 cups (packed) chopped kale, stems removed

   ¼ cup water

   ½ cup 0% plain Greek yogurt (optional)

   2 oz herbed goat cheese, cut into small pieces

   Pinch of sea salt or Mrs. Dash seasoning

   Freshly ground black pepper to taste



1. In a medium saucepan, bring 2 cups of water to a boil, add the quinoa, (rinse in a colander first) reduce to a simmer, and cover. Simmer for 10 minutes and remove from the heat, uncover and let stand.

2.  In a large nonstick skillet, heat oil over medium-high heat.  Saute’ onion, bell pepper, and garlic for 2-3 minutes. Add kale to the skillet and stir. Season with salt or Mrs. Dash seasoning and black pepper.  Add ¼ cup water and let simmer for 5 minutes, or until the kale is wilted and the excess water is evaporated.

3. Add the quinoa to a large bowl and combine with the sauteed kale mixture. Add Greek yogurt (optional) and goat cheese. Stir well to combine. Serve warm or at room temperature.

Serving size 1 cup. Serves 4.
